Vanilla beans come in many shapes and sizes. Not only are there variations in length and plumpness, (says the short and plump girl here), but the flavors can be dramatically different. The species, growing location and conditions, and curing method will all work together to make unique and lovely flavor profiles.
Once we get our hands on them, we also have a hand in the finished product by which extracting mediums we use. For a true extract it must be in a properly proofed alcohol and at the correct ratio to vanilla beans.
Once the extracting process is complete, we can also choose to "finish" the extract with oak that has been charred to various levels.
Every step brings each batch closer to a unique finished product.
